HELLO FRESH PARMESAN-CRUSTED CHICKEN WITH CREAMY TOMATO SPAGHETTI RECIPE

Ever since making this Hello Fresh meal, I have become slightly obsessed. It was so dang good and so easy to make. If you can’t afford to get Hello Fresh every week, they have really good recipes on their website! This recipe is for two people but you can always double it for four!

Parmesan-Crusted Chicken With Creamy Tomato Spaghetti:

INGREDIENTS

  • Lemon
  • Panko Breadcrumbs
  • Fry Seasoning
  • Parmesan Cheese
  • Two Chicken Breasts
  • Dijon Mustard
  • Mayonnaise
  • Spaghetti
  • Grape Tomatoes
  • Garlic
  • Cream Cheese
  • Olive Oil
  • Butter
  • Salt & Pepper

DIRECTIONS

  1.  Preheat oven to 450 degrees
  2. Bring a large pot of salted water to a boil
  3. Line a baking sheet with foil and lightly spray or spread olive oil
  4. Zest and quarter a lemon
  5. In a small bowl, combine the panko breadcrumbs, half of the fry seasoning, half of the parmesan cheese, and a drizzle of olive oil
  6. Dash of salt and pepper
  7. Place chicken breast on baking sheet and on one side season all over with salt, pepper and remaining fry seasoning.
  8. In a small bowl, mix together the mustard and mayo
  9. Once mixed, spread on one side of chicken breasts then mount the coated sides with the panko breadcrumb mixture (press to adhere)
  10. Roast for 10 minutes
  11. When water is boiling add in the spaghetti and cook 9 to 11 minutes (reserve 1 cup pasta cooking water)
  12. Halve the tomatoes and mince the garlic
  13. In a medium bowl, toss the tomatoes and garlic with a drizzle of olive oil
  14. Season with salt and pepper
  15. Once the chicken is done roasting, place seasoned tomatoes on the same sheet and put back into the oven for 7-8 minutes or until chicken is cooked through
  16. Melt 1 TBSP of butter into the pot used for the pasta and add the remaining garlic
  17. In a lower heat, add in the cream cheese, some lemon zest, another TBSP of butter and the 1/4 cup of reserved pasta cooking water until smooth
  18. Squeeze in 1 TBSP of lemon juice and add in spaghetti
  19. Add half the tomatoes to the pot and toss to combine
  20. Add chicken and pasta on a plate and put the rest of the tomatoes on your chicken
  21. Top with remaining parmesan cheese
